KZN Midlands, KwaZulu-Natal
KZN Midlands roastery in Howick, founded by Dario Scilipoti. Three CMA awards in five years. Known for the DREAMER blend (the bridging coffee), a popular subscription model (Curated + Best of Bluebird tiers), and lifestyle brand collaborations with Salomon, K-Way, Killat Gear, Minimalist Wines, and Volcán Azul. Also created one of the most useful free resources in SA specialty coffee — the Bluebird Grind Size Guide. Working on Grind Guide v2 and a full website redesign. The adventurer/dreamer/daily drinker positioning is the brand thesis.

Durban, KwaZulu-Natal
Women-led Durban roastery founded by Amy Gardiner (Edinburgh, Scotland) in 2017. Two-time Coffee Magazine Award winner — Café of the Year 2023, A Shot in the Dark 2024. Recently expanded from Churchill Road to a 100-seater venue at 222 Lilian Ngoyi Road, Windermere. All-women team of ~20 staff. Roasts in-house in 4kg batches on 'Big Rosie'. Also operates a vegetarian-first bakery and café. Motto: "Be Nice, Stay Humble."
